Our first dinner in Chef Sven Erik's matbaren Renaa:Matbaren

Chef Sven Erik taking his rest day off to shown us around his restaurants, kitchen and even cooked for us! I have my fill of blue mussels and local (season) strawberries! If you're here in summer, you MUST try the mussels, strawberry and (new)potatoes!

The dinner and wine/beer pairing was absolutely delightful. You can easily find Estrella Damm Ineddit's beer by Ferran Adrià el Bulli team in Stavanger, a very rare and good beer from Spain! We ended our meal with a cuppa tea/coffee I had the tea, of course. And an interesting peek at Chef Sven Erik's book - Naked Ingredients.

At 1100hrs on a beautiful Sunday, we gathered at Renaa: Matbaren for the arrival of Chef Sven Erik to go on a pleasant little trip at his friend's, Mr Sigurd's farm. Despite the misleading weather forecast we've known, the weather held throughout the day till very much later in the evening.


It was a scenic & pleasant ride from Stavanger town to Hommersåk. We arrived at Gydas Jordepler less than 30 minutes later, or so. We were greeted warmly by Mr Sigurd & Family, and the arrays of beautiful plants, flowers, herbs, vegetables, strawberries & several animals. I was so pleased to meet a cutesy ginger cat there who kept following me around! He was my little furry guide around the farm. Lucky-su! Also note, I was being chosen by one of the working Fjord Horse at the farm! She, too, was following me around, closely & nudging me ever so often! Fjord Horses are not particular tall in built but I've learnt they are strong and keen worker! Mr Sigurd had to made the horse stop working the farm from time to time as they can be quite the workacholic! Amazing!


I was lucky to have Mr Sigurd showing me the farming tools & am totally amazed at how ancient, precious and effective they were! There aren't wastage or big, dirty tractor machines here. Plants are watered by rain & fertilised by the animals' manure. The animals are fed with what was grown here. I also learnt that by using traditional method of farming with 'em horses, the soil are better controlled in loosening, density and spacing.


We spent quite some time here before leaving for lunch nearby. I wasn't ready to leave these beautiful farm, garden and animals. I don't think anyone will, especially on such a beautiful weather. It has been raining quite a lot before this trip. Coming here was the best treat for me thus far!

Lunch at Kronen Gaard Hotell on our way back to Stavanger Town. This is where we, unknowingly, gotten a good tan. As for me, the back of my neck was burnt, unknowingly, of course. The sun was strong but the chilling wind has done a good job at masking it. I had the grilled beef steak; mistake! I really should just stick to seafood in this part of the world. Kenneth had a Norwegian traditional braised beef served with some sort of local sour cream blend and jam. It was good! The shrimp cocktail salad in Stavanger is the real deal. Unlike many other places, the shrimp IS the main and not buried by greens. So, if you're visiting Stavanger and its surrounding towns, remember to just go for the seafood (blue mussels, halibut, cod, salmon, shrimp), local potatoes (season) and local strawberries (season). I've never eaten potatoes this good in other parts of Europe/America thus far!

An hour plus after we came back from our fishfarms tour, we are once again on the road towards our next destination for the day. This evening, we will be visiting Gastronomisk Institutt (Stavanger), guided and presented by Chef Danièl Rougè Madsen.

Leaving from Vågen by lawlessstar


A brief, windy walk from our apartment towards the dock at 0800hrs is enough to awaken anyone's senses to its fullest! It wasn't the loveliest summer morning in Stavanger but it was definitely a much anticipating boat trip we've been waiting for. This morning, together with all the lovely people in this mini tour, we will be visiting fish farms Ryfisk Processing Plant, courtesy of Marine Harvest, Mr Trond Valderhaug on board with us.


Fister Smolt Facility by lawlessstar


Fister Smolt Facility. I would have expected an industrial environment but it is situated in such a lovely surrounding! A small number of summer campers along the cove and backed by a small hill of green field! That very same slope which I would encounter my first Fjord Horse. Amazing!

We spent quite a bit of time here and learnt quite a lot about the crucial stages in salmon's growth cycle. The idea, interest and break-through were marked in an historical dateline way, way back than you and I would have expected. I was totally amazed and impressed - online reference.



Next stop, Centre of Aquaculture Competence, an impressive (large scale) fishfarm research facility. You can read more about this facility's main ongoing projects and details online - here.


White Halibut Farm by lawlessstar


We made an extra (brief) stop at Sterling White Halibut Farm before lunch. This is the first time I saw a live halibut! In this case, a farm of live halibuts! Through the observation (underwater camera) telly, I can see their specially built condominium, where these fishes dwell (and what's not *wink*). It was an interesting and fascinating experience. On our way to SPA Hotell Velvære, our kind coxswain made a little detour for a scenic close-up of a waterfall along the fjord. Sweet!

Aahh, lunch! I was pretty famished by then as I've missed breakfast that morning. Cold weather and all these excitements had definitely doubled my metabolism rate at that point. I burnt a whole lot more in the cold! Lunch was simple and good. We had halibut (huge portion!), smoked salmon and strawberries. We were in quite a rush for this lunch, pressing time for our next stop at Marine Harvest's processing plant before going back. Mr Trond V. needs to catch a flight out that same day!

We had a 3 course set menu created by Chef Anders Stokkebø.
  1. Amuse Bouche - Garlic Gratinated Langoustine.
  2. Smoked Salmon with Celeriac Puree.
  3. Pan-Roasted White Halibut with Vegetables.
  4. Strawberry, Rhuhbarb and Vanilla Cream.
Chef Otto ordered a bottle of Chablis. Brilliant.
