| Slit and stuff garlic slices |
INGREDIENTS
- 2 Chicken Thighs
- 3 Cloves of Garlic, sliced
- 2 Tbsp Shio Koji
- Salt
METHOD
01. Pat dry
chicken thighs before making some deep slits on both sides.
02. Rub
shio koji onto meat, making sure it goes into the slits and under the skin.
03. Stuff
garlic slices into slits.
04. Let it marinades in the refrigerator for
30 minutes to
1 hour.

Shio-koji may not be easily found in Europe/U.S.A's Asian markets. Unless you're staying in the city with Japanese Supermarket. However, you may be able to get 'em from Amazon.
Making your
own shio-koji is quite a hassle, too. Just the ingredients needed when you stay outside of
Japan will send you back to buying it off the shelf straight.

Setting > 230C > 20mins > Roller On
Look at it
roll! Be careful of burnt. Marinating in
shio-koji can make your meat/seafood/vegetable burnt easily. To avoid that, make sure your meat has good amount of fats or coat it with more olive/cooking oil. If the
chicken skin cooks too fast, before it's cooked through, reduce the
heat, NOT the timer.
Remove
steak cage carefully from the
airfryer. Gear up well to remove the lid and the cooked
meat out from the
steak cage while it's still hot! You'll need to
carefully struggle a little if the meat burnt onto the cage itself

You can serve the cooked meat on top of a bed of thinly sliced fresh cabbage - drizzle with some wafu sauce - and pour the remaining jus found in the airfryer onto the meat.
I'm pairing it with Spicy Butter Grilled Brinjal.
INGREDIENTS
- 1 Brinjal, cut into 4 halves
- Nonya Dried Shrimp Sambal
- Butter
- Sea Salt
METHOD
01. Place slices of butter on baking pan. I've used cheese slicer to shave it.
02. Place
brinjal onto buttered pan, skin side down, turning it left and right a little to coat it well with butter.
03. Shave butter to cover the top of
brinjal, sprinkle salt to taste.
04. Airfryer > High Steel Rack > Baking Pan > Setting > 200C > 8 minutes (set longer for thicker pieces)
05. Pause cooking at the last
2-3 minutes to spread
Nonya Dried Shrimp Sambal and continue to cook through the remaining time.
06. Remove grilled brinjal and pour remaining melted butter onto it before serving.
