The second dish is my favourite from Chef Alain! It is a great idea and refreshing dish which I can also use it on other vegetables back home. I am a big fan of tomatoes!
I tried it the following day. Not having lemon back home, I went for the lime instead. To my horror, my lime tree is rather bald! I had only one cute li'lime to go. So, I finely chopped bits of lime leaves for fragrant, added citrus pressed oil and ... the end result wasn't too bad! Choose your honey and its amount wisely, as emphasized by the chef. Mine was a little too sweet and lack, severely the acidity. I don't have any light vinegar at home - balsamic is a no-no and my Japanese vinegar is too empowering in taste.
I will definitely give this recipe another go. Real soon!
