Grilled Shiitake, Baked Milky Egg Brunch

Milky baked egg, grilled mushroom & cherry tomatoes

All in one airfryer brunch. I love shiitake mushroom, fresh AND dehydrated (^-^@)The umami...mmmm Σd(゚∀゚)

All IN now!

INGREDIENTS

  • Shiitake Mushrooms
  • Cherry Tomatoes
  • 1 Egg, beaten
  • 1 clove Garlic, minced
  • Sea Salt
  • Black Pepper
  • Butter
  • 1 Tbsp Milk
  • 1/2 tsp Mirin
  • A pinch of sugar
  • Olive Oil

METHOD
  • Remove stems from mushroom, minced.
  • Coat cherry tomatoes with olive oil, salt, black pepper.
  • Spread butter on aluminium foil & mushroom.
  • Sprinkle black pepper & salt on mushroom and tomatoes.
  • Whisk egg, milk, sugar & mirin well.
  • Add minced mushroom stem, minced garlic & milk.
  • Salt to taste.
  • Mix well & pour into ramekin well coated with olive oil.
  • Place everything onto high rack in airfryer.
  • Airfryer > 190C > 12mins.
*If you like your egg a little more runny, remove from airfryer under 10mins.

Butter grilled shiitake mushroom goes really well with grilled cherry tomatoes!
